Chocolate Almond Cookies

Ingredients:
- 1 cup (2 sticks) butter, softened
- 1 cup sugar
- 1 egg
- ½ teaspoon almond extract
- ½ teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ cup cocoa
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ⅛ teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/3 cup granulated sugar for rolling
- ½ cup slivered blanched almonds

Directions: Chocolate Almond Cookies
1. In a large mixing bowl, beat the butter and 1 cup of sugar on high speed until fluffy, about 3 minutes.
2. Add egg, almond extract, and vanilla. Continue beating on medium speed until well blended.

3. In another mixing bowl, combine flour, baking powder, cocoa, salt, baking soda.
4. Add the dry ingredients little by little to the butter mixture. Beat until you get a soft and smooth dough.
5. Stir in the chocolate chips.
6. Cover the dough with plastic wrap, and refrigerate dough about 30 minutes to 1 hour or until the dough is firm.
7. Preheat the oven to 350°F, and place the oven rack in the middle position.

8. Shape dough into 1¼” balls. Roll the cookie balls into the sugar.
9. Place the cookies about 2” apart on ungreased cookie sheet lined with parchment paper.
10. Place a few slivered almonds on top of each ball. Press slightly.
11. Place in the oven, and bake 8 to 10 minutes or until the cookies’ edges become slightly browned.
12. Remove from the oven, and let cool down for a few minutes. Place the cookies on a wire rack, and allow to cool completely.
